I’m still working out this recipe, but I’m including it anyway because I want to save the current status and ingredients list. There’s a fair number of variations on succotash and I’m taste-testing my way around, to find out what works for both A) I love it and B) I happen to have ingredients on hand. Lima beans always, because I love lima beans.
Ingredients
For ingredients, use what you have on hand out of the list.
- 12 oz pack corn or 4 ears of corn, roasted and removed from the cob
- 1 can Lima beans
- 1 Red bell pepper, diced
- cherry tomatoes / halved
- 1/2 red onion, chopped
- 1 small zucchini, chopped
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp fresh ground pepper
- finely chopped garlic
- 1 tsp thyme leaves
- juice of one lime or 1 tbsp red wine vinegar
- optional – 1 tsp chopped sage leaves
Mix all ingredients, serve.
