I’m still working out this recipe, but I’m including it anyway because I want to save the current status and ingredients list. There’s a fair number of variations on succotash and I’m taste-testing my way around, to find out what works for both A) I love it and B) I happen to have ingredients on hand. Lima beans always, because I love lima beans.


For ingredients, use what you have on hand out of the list.

  • 12 oz pack corn or 4 ears of corn, roasted and removed from the cob
  • 1 can Lima beans
  • 1 Red bell pepper, diced
  • cherry tomatoes / halved
  • 1/2 red onion, chopped
  • 1 small zucchini, chopped
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp fresh ground pepper
  • finely chopped garlic
  • 1 tsp thyme leaves
  • juice of one lime or 1 tbsp red wine vinegar
  • optional – 1 tsp chopped sage leaves

Mix all ingredients, serve.
