Ambrosia Salad (aka ‘Unicorn Puke’)

Ambrosia is an absolutely incredible fruit salad made with cherries, pineapple, mandarin oranges, coconut, cream cheese, and miniature marshmallows.

My grandmother used to make this wonderful dessert for family get-togethers and picnics.  Fortunately, my cousin Sarah saved the recipe. we always called it “Ambrosia” until one fateful day someone (who shall go nameless) called it “Unicorn Puke”. The new name stuck.

Ingredients
1-8oz package of cream cheese (lite is fine)
2-8oz containers of cool whip (lite is fine)
2-20oz cans chunk pineapple
1-15oz can mandarin oranges
2-10oz jars of maraschino cherries
1 1/2 bags (21oz) coconut
1- 2 10oz bags of small flavored marshmallows

Instructions
Mix softened cream cheese and whipped cream together with your hands, making sure it is mixed through with minimal cheese lumps.
Drain pineapple save the juice for later
Add pineapple to whipped cream mixture
Drain oranges and add to mixture.
Drain cherries save juice for later, add cherries to mixture
Mix with hands
Slowly add in coconut until it starts getting thick. If it feels dry add a little pineapple juice. Mix well
Then slowly mix in marshmallows
If dry, mix in a little cherry juice.

If you make it a day in advance, keep the pineapple juice so you can mix it in, to keep salad moist.
