This makes one meatloaf. It’s great in the fall, when you want something with a little more substance than a light summer salad, but aren’t quite yet ready for the rich soups and stews of winter. Serve it with a side of sauteed summer squash and zucchini, or topped with an egg cooked sunny side up.

Ingredients
1 1/2 lbs ground turkey
2 eggs
1/2 cup panko breadcrumbs (use whole wheat if possible)
1 cup oatmeal
2 or 3 large diced tomatoes from the garden or 1 can diced tomatoes
3-4 cloves garlic, minced
1 large yellow onion, chopped (about 1 cup)

Instructions
season heavily, vary seasoning depending on what you have a taste for. I like Meat Magic. Another favorite is Old Bay Seasoning, which in my personal opinion goes well on almost EVERYTHING. (Maybe not cookies or cake).
mix everything together except 1/4 can of diced tomatoes.
put in large baking dish or bread pan
top with remaining diced tomatoes
bake at 375 for 2 hours

let cool
